The Chia Cha Cha

Fiber is my friend. My close, personal, “I have a disease that effects my gut and I need my food to help my cause” friend. Too much information? Huh…well, it’s my blog and I’ll blab if I want to.

Chia Seed Pudding is a standby, an oldie, dependable and versatile and chia seeds are full of fiber. Add in their protein, calcium, magnesium, and low calorie count and I get pretty excited about them. Is chia pudding cute? Nah, not really. It is merely a blank canvas of nutrient packed goodness that you can dress up in a cute outfit and take out on the town.

There really isn’t a recipe here…it’s just a ratio. Want to make your chias swell up and take on a pudding-like texture? It is 1 portion of chia seeds to six portions of liquid. That’s it. 6:1. So why does it seem so special? Please see below:

Classic Chia Pudding:
2 tbsp chia seeds
3/4 cup almond or coconut milk
1 tsp vanilla extract
dash of cinnamon
pinch of stevia

Mocha Chia Pudding:
2 Tbsp chia seeds
1/2 cup chilled coffee (GOOD COFFEE)
1/4 cup almond or coconut milk (Or coconut cream!)
1/2 tsp vanilla extract
1 tbsp dark cocoa or Dutch cocoa powder
1/2 tsp stevia if you like it sweet

Mix well and allow to set in the fridge overnight. Top with DF chocolate chips, GF chocolate granola, of whatever you like with your mochas

Chocolate PB Chia Pudding:
2 tbsp chia seeds
3/4 cup almond or coconut milk
1 tsp dark cocoa or Dutch cocoa powder
1 tbsp PB2 (Peanut butter powder) or 1 tsp of actual nut butter

Mix well and allow to set in the fridge overnight. Top with DF chocolate chips or salted peanut.

Mexican Hot Chocolate Chia Pudding:
2 tbps chia seeds
3/4 cups almond or coconut milk
1 tsp dark cocoa
1/2 tsp cinnamon
1/4 tsp vanilla extract
1/2 tsp stevia
dash of cayenne (Optional)

Mix well and allow to set in the fridge overnight.

Guys…there are SO MANY POSSIBILITIES! I tend to add coconut yogurt, fresh berries if they are in season, and I am currently obsessed with Bunches of Crunches from Bakery on Main and it’s chocolate coconut superfood granola magic. Come on, you know you love anything you can customize the toppings for. Give it a shot!
